Tsarapi added to list of Georgian appellation wines

The Georgian wine variety of Tsarapi ​​​​​has been added to the list of protected Georgian appellation wines, announces the National Intellectual Property Center of Georgia (Sakpatenti).

Tsarapi is an amber dry wine from the village of Kardenakhi of Gurjaani region of Georgia, on a 3-4° inclination of the Tsiv-Gombori Range North-East slope, on the right bank of the River Alazani. It is located at the coordinates of 41°48' N, 45°44' E and is located between 350-550 meters above sea level.

Its organoleptic and physicochemical characteristics shall satisfy the following requirements:

  • Color – from dark amber to tea-color
  • Aroma and taste – has a body, energetic, extracted and velvet, having intensive aroma, moderately and softly sharp, making it typical. The bouquet of fruit tones is developed with aging
  • Volumetric spirit content – no less than 12%
  • Concentration of finished extract mass – no less than 24  g/l
  • Titrated / volatile acidity – no less than 5 g/l

Tsarapi wine should be produced exclusively from the grapes of Rkatsiteli. It can be produced with adding the grapes of Kakhuri Mtsvane and/or Khikhvi, 15 per cent together, usage of other grape varieties is prohibited.

Until now, there were 30 Georgian appellation alcoholic and mineral beverages registered in Georgia by Sakpatenti. The list can be found here.
